Abstract

School lunch programs, from their small beginnings early in the century, have become increasingly important to the education, health, and well-being of the youth of America. Through them, growing numbers of the school-age population receive approximately one-third of their daily food requirement. They also may learn about the nutritional values of the foods to which they are accustomed and the various ways these can be prepared and served. Through their school work they gain experience with new foods; they learn how foods are prepared, where they are produced, and how they fit into people's daily diets.
