Abstract

The purpose of this study was to assess the nutritional value of selected Northeast Iowa school lunch programs. This was done by analyzing a consecutive five day sample of the main line lunch from 6 rural schools and 1 metropolitan school. Mean daily nutrient values were obtained through the use of the Dine System for diet analysis. Comparisons were made between the elementary and secondary school lunch programs and also with one-third of the recommended dietary allowances (RDA) and between the urban and rural school programs. Mean nutrient value for energy, protein, sodium, potassium, vitamin A, vitamin C, iron, and calcium were compared to one-third of the RDA. Only energy for secondary males and iron for both secondary males and females were not being served in the recommended amounts. All of the other nutrients at both the elementary and secondary levels were being served in amounts greater than the recommended. The nutrients used to compare the elementary programs to the secondary consisted of total calories, protein, fats, carbohydrates, fiber, cholesterol, sodium, potassium, vitamin A, vitamin C, iron, and calcium. Only slight absolute differences were seen between these two programs. At test was used for comparison purposes and showed that there was no significant difference between the mean nutrient values being served at each level. Comparisons made between the urban and rural school programs also showed little differences. The urban school did, however, appear to be serving meals with less fat and cholesterol in them than did the rural schools in this study. The urban school was coming closer to meeting some of the American Heart Association recommendations for the reduction of some of the risk for cardiovascular disease than were the rural schools.
